The Still Room
Salves and infusions from what you already grow
If you are growing calendula, lavender, or buchu and doing nothing with the harvest, you are leaving the most useful part of the still-room unused. Making infused oils and salves is a one-afternoon process that requires no special equipment.
The short answer
Infused oils are made by steeping dried plant material in a carrier oil — either slowly over two to four weeks at room temperature (cold method) or in two to four hours with gentle heat. The oil is then strained and, for a salve, combined with beeswax. In South Africa, the main variables are shelf life and drying time: our heat accelerates both rancidity and mould, so dry thoroughly, store cool and dark, and label every batch with plant, oil, date and method.
What you need before you start
The materials list is short: dried plant material, a carrier oil, clean glass jars, a double boiler or slow cooker, a fine strainer or cheesecloth, and — for salves — beeswax. Every item on that list matters more than it looks. Damp plant material introduces water into oil, and water is where mould begins. Thin, cheap carrier oils go rancid quickly in warm storage. Unsterilised jars shorten shelf life before the product even cures.
Choose your carrier oil based on how you intend to store the finished product. Sunflower oil is the most practical locally sourced option and has a reasonable shelf life. Fractionated coconut oil stays liquid, does not go rancid quickly, and is available at most health shops. Jojoba is technically a wax and almost does not go rancid at all, which makes it the most shelf-stable base for South African conditions — it is also the most expensive. Olive oil is heavily used in European salve traditions and is fine in cooler climates; in our summer storage temperatures it turns rancid faster than most people expect.
The two methods: heat versus cold infusion
Cold infusion (folk method)
Pack a clean, completely dry glass jar loosely with dried plant material — roughly one part herb to two parts oil by volume, not weight. Pour carrier oil over it until the plant matter is fully submerged with at least two centimetres of oil above the surface. Seal the jar, label it with plant, oil and date, and place it somewhere out of direct sunlight. Leave it for four to six weeks, turning the jar daily for the first week to dislodge air pockets.
At the end of the infusion period, strain through a cheesecloth or fine muslin, pressing the plant material firmly to extract the last of the oil. Compost the spent herb. Pour the strained oil into clean, dry, dark glass bottles and label immediately. Do not leave labelling for later — batches look identical after straining.
Cold infusion preserves volatile compounds that heat degrades, which matters for aromatic plants like lavender. The trade-off is time and, in humid summer conditions, a higher risk of mould if any moisture was present in the herb or the jar.
Heat infusion (accelerated method)
Place dried plant material and carrier oil in the top of a double boiler or a slow cooker set to its lowest setting. The target temperature is 50–65 °C — warm enough to extract, cool enough not to cook. A cooking thermometer pays for itself here. Maintain that temperature for two to four hours, stirring occasionally.
Strain and bottle exactly as for the cold method. Heat infusion is faster and carries less mould risk because any residual moisture in the herb is driven off by the warmth. The trade-off is that some volatile aromatic compounds leave with the steam. For resinous or tough plant material — dried buchu, rosemary stems, calendula petals — heat infusion is usually more effective at extracting the useful constituents.

Making a basic salve
A salve is an infused oil thickened with beeswax. The standard ratio is roughly 30 g of beeswax per 200 ml of infused oil, which produces a firm but workable salve. In South African summer heat — where a product might sit in a car, a shed, or a kitchen that reaches 35 °C — go slightly higher, around 35–40 g per 200 ml, or the salve will soften to the consistency of a thick oil and leak from its container.
To make it: melt the beeswax gently in the double boiler, add the strained infused oil and stir until fully combined. Pour immediately into clean tins or small glass jars before it begins to set — it sets faster than you expect. Do not pour into plastic containers; some carrier oils leach into plastic over time. Leave the containers undisturbed and uncovered until fully cooled and set. Fitting lids onto warm salve traps condensation on the underside of the lid.
A small test pour into one tin first is good practice. Let it set for ten minutes. If it is too soft, return the batch to the heat and melt in a little more beeswax. If it is too hard and waxy, melt and add a small amount more oil. This adjustment is easier to make before the entire batch has set.

The plants below are mentioned because they grow reliably across most of South Africa's climate zones and because they are commonly used in still-room work. This is a list of plants and their growing characteristics — not a list of conditions they treat. Any claims about what a preparation does medicinally require a registered health professional and fall outside what we write here.

Shelf life and our climate
The honest shelf-life figures for infused products in South African conditions are shorter than most recipe books state. Those books were written for cellars and cool pantries in the northern hemisphere.
As a working guide: sunflower or olive oil base, stored in a cool, dark cupboard — 4 to 6 months. Fractionated coconut oil base, same storage — 9 to 12 months. Jojoba base, same storage — up to 18 months. These figures assume the herb was fully dry, the jar was clean, and the product has been stored below 25 °C consistently. Summer in most of South Africa makes that last condition difficult without a dedicated cool room or a fridge shelf. Products stored in a shed or garage through summer will degrade faster regardless of the carrier oil.
Rancidity has a smell — a crayon-like or paint-like odour that is unmistakeable once you know it. Any batch that smells rancid should be discarded and not given away. Mould in an oil is visible as cloudiness, off-colouring, or sediment that was not there when the batch was made. Both are discard conditions, not salvage conditions.
Storage, labelling and dating
Dark glass is the standard container for infused oils. Light degrades oil over time, and glass does not interact with the product the way some plastics do. Amber or cobalt blue glass is widely available from soap-making and cosmetic-supply retailers in South Africa. Small tins — aluminium or tin-plate — are appropriate for finished salves and travel better than glass.
Every container should carry a label with five pieces of information at minimum: plant used, carrier oil, date made, method used (cold or heat), and best-before date calculated from your shelf-life estimate. If you are giving products away, add your name and a note that it is a home preparation. The absence of a label on a shared product is both practically dangerous — it cannot be identified if there is a reaction — and legally murky under the Foodstuffs, Cosmetics and Disinfectants Act 54 of 1972, which applies to any cosmetic preparation you distribute, even informally.
Store oils upright, not on their sides. Store salve tins away from direct heat. A dedicated shelf in a cool internal cupboard, away from the stove, is sufficient for personal use. If you are making larger batches for sale or regular sharing, a bar fridge dedicated to the still-room is worth considering — not for the cold itself, but for the stable, dark, temperature-controlled environment.
What people get wrong
Using fresh plant material. This is the most common reason batches fail. Fresh herbs contain water. Water in oil produces mould. The still-room tradition of hanging herbs to dry before processing exists for exactly this reason. In a humid climate, "dry" needs to mean bone-dry — not just wilted.
Infusing at too high a temperature. A double boiler set too enthusiastically, or a slow cooker that runs hot, can take the oil well above 65 °C. This does not make the oil unsafe, but it diminishes the aromatic compounds and can push the carrier oil closer to its smoke point than it should go. Use a thermometer.
Skipping the test set on salves. A salve made to a fixed ratio without testing will either be too soft for summer or too stiff for winter application. One small test tin before pouring the full batch takes five minutes and saves the whole batch.
Pouring too cool. Salves begin to set from the outside of the pour. If you dawdle, you end up with a layered or lumpy texture rather than a smooth set. Have all your containers ready before you take the salve off the heat.
Not labelling immediately. Two batches of amber oil in unlabelled jars are indistinguishable after three weeks. Label before you move on to the next task.
What we would do differently
- Dry all plant material in a dehydrator rather than air-drying — moisture content is more reliable and drying time is shorter, which matters in humid summer months.
- Switch the default carrier oil from sunflower to fractionated coconut oil for any batch that will be stored through summer — the cost difference is real but the shelf life extension is worth it.
- Make a small test batch in a single jar before committing a full harvest to an infusion method you have not used before with that specific plant.
- Keep a simple batch log: plant, source, harvest date, infusion start, strain date, yield in millilitres, storage location. A single notebook page per batch takes two minutes and makes the second batch much easier.
- In high-humidity areas, store finished oils in the fridge rather than a cupboard during summer, even if this means decanting into a smaller working bottle for daily use.
- When making salves for warm-climate use, test the set at the highest temperature the storage location reaches in summer — not room temperature in July.
Is it worth it?
If you are already growing calendula, lavender, rosemary, or buchu, the case is straightforward — the raw material is already there, and the process from dried herb to finished oil takes an afternoon. The equipment cost is minimal: a double boiler or slow cooker, a thermometer, glass jars, cheesecloth, and beeswax are all you need.
If you would need to grow or source the herbs specifically for this purpose, the calculation is less obvious. Growing calendula to infuse requires patience across a season; buying dried calendula from a supplier to infuse into expensive jojoba is a reasonable product but not a significant saving over buying a finished oil. The value of the still-room practice is in using the harvest, not in competing with commercial producers on cost.
Where the effort clearly pays is in two situations: households with established herb gardens who currently let the harvest go to waste, and those who want to know exactly what is in what they are putting on their skin. The process is transparent in a way that a purchased product is not. For those two reasons, it is worth doing — but it is worth doing properly, which means dry herbs, the right carrier oil for your climate, honest shelf life, and a label on every container.
